Parkour Courses (this is a just-for-fun one).

Plots? (possibly) -> Only a designated person can build or use on a specified area.

Could do Connect 4/other minigames.

Speed-Run (you race to the end to win).

Any minigames (speed-run, Parkour, C4, etc.) will give you some leeway for events, prizes, and even some in-game "special" items (like custom-spawners).
