Basically; To finding out how EoC works the best way is to test it yourself; I don't think you can be guided through it, as it's rather new and not many players can use it to the maximum yet, as it's complicated as well.

About the GE: Basically the EG is a place where you can buy or sell any items based on pre-determined prices; The grand exchange will sell items to buyers based on the highest bid offered, if the criteria price of the seller is met; Otherwise it will get stuck in there, until an offer is met, or you cancel your offer. Same goes for for buying, but the other way around. Also be aware, that the target prices in GE (especially for rares) will at times not match the street price!
