Help me decide what macbook pro to get.

Looks like it doesn't void the warranty. http://manuals.info.apple.com/en_US/macbook_pro_15inch_late_2011.pdf The handbook has instructions on how to do it. It's super easy, it's really a waste of $100 to not do it yourself

Actually, they also explain how to replace the hard drive, which is also really easy. You should buy the SSD online too, you can get one for less money, plus then you can use the 500gb hdd that comes with your macbook as an external hdd
