Help me decide!

Basically I want to make a staker, and I'm stuck in-between two decisions.

A; 70-80 Def, 60-80 range 60-80 hp

B; 50-70 range and 80-99 hp

Which build should I make for staking, both have their benefits, and both have their negatives.

P.S. Those are just a range of what the levels will be.
