Determining prices for 07 service threads

I'm planning to start a questing and skilling service on here for old school runescape and i am just wondering how people decide how much they want to charge per quest or the gp/xp for a skill.

I've been browsing the user services section and I see such a gap between what people are offering and this doesn't even seem to be based on trust or vouches, does this mean people giving a service just determine the price and if it's in demand and they know no one else is online they try to charge as much as they can? Like agility for example I see people charge 30-40gp per xp but as I don't mind doing agility do I really need to ask for that much and if I undercut others does this flag in people's heads that I look desperate for work and might not be that efficient or reliable?

As for questing I would like to find a way of calculating a reasonable amount for each quest but there seems to be so many questing services that also have this big gap between what they charge. For example some would charge 100k-200k for cooks assistant where others charge 300k-500k for such a simple quest and there's also others that charge 300k-700k for quests such as Doric's quest and witches potion which are both as easy as cooks assistant and are just item hand ins with minimal walking.

I'm just wondering has anyone who sees this had experience of starting with low prices and increasing over time and noticing any differences? Or do you base your quest and skill prices on personal experience with them or a mixture of time taken and difficulty?
