    What am I looking for?

I'm looking to record/stream my gaming on my TV.

The TV I have has a 'Video Audio INPUT' and a 'Video Audio OUTPUT' these
are RCA cables. (red, white, yellow)
What I'm looking for is a 'RCA to USB' cord, pretty much.
    I found this: http://www.jaycar.com.au/productView.asp?ID=GE4050 (
    Coincidently, it's jaycar)
But it only does the audio.
Do you know of any other places that may have what I'm looking for?

So are you displaying the game screen onto your TV (XBOX, PS, Wii, etc), and you want to record what is going on on the TV screen?

If so, you would need to get a compatible TV Tuner. You'd connect this to your TV & computer. You'd then be able to view whatever is on your TV on your computer screen. Then you could use a program such as Fraps or Camtasia Studio to then record your computer screen.

If you're trying to put your computer's screen up on your TV, all you would need to do is find what display ports your computer has. For example, mine has an HDMI and VGA port. When I want to watch 1080p movies I've downloaded, I just connect my HDMI to HDMI cable to my laptop and then to the HDMI port on my TV, then switch to the HDMI 1 input option. If this is what you are trying to do, then all you would have to do is set the display option in your Control Panel to show both your desktop & TV screen, and then just run Camtasia Studio, or Fraps (if the game is fullscreen) while you play.
