Depends on your stats, but from my friends I know:

Making willow logs into longbows (u) and then stringing them turns a 50 gp profit per bow, while yew longbows are double that.

you flech the bows and then sell them to the bow and arrows guy from 1-65 and either profit slightly or break even, then at 65 you can make yew shortbows and profit pretty good.

 

Edit: Yew longbows sell quicker for around 100-150gp profit a bow, while yew shortbows sell for more, they take a much longer time to sell them all.
