It's all just a combination of blending options. Start with a base color and add a gradient overlay of black - white and play with the blend mode of that (darkening at bottom), a drop shadow, a bevel and potentially a slight inner/outer glow. It's basically a series of trial and error to work out what looks good and what doesn't.

    Download these layer styles.

    chameleon style1

They are preset so you can go through the blending options to see how it's created. You will learn faster that way.

Gradient overlay (you can either use the black and white default one and change the blending mode to something like "Overlay" or whatever or you can set the colors)
Then add an inner shadow (1px white color dodge usually and mess with opacity)
Add a stroke (usually the a darker color of the one in the text)
And a drop shadow (play around with the settings how you want)
