Bourne has beaten trained CIA assassins, and countless other opponents. He is the definite winner in my opinion.

Rambo is impressive, however is not trained for competing against top of the line trained hitmen, just his own endurance, willpower, and strength carry him.

Schwarzennger/Schafer is Strength, and standard fighting, couldnt fight advanced operatives knowing martial arts.

The law enforcement people listed are exactly that, law enforcement, not meant to be able to fend off professionals. No chance, even with cunningness.

Ethan Hunt is a viable option, however, IMO, his lacking strength and size would be his weakness to Bourne.

Plissken is another viable option, due to being ex special forces and going through many rough adventures, however Bourne and perhaps even Ethan Hunt could beat him.
