How To Make a Pumpkin Roll

Ingredients For Pumpkin Roll

3 eggs
8 ¾ oz sugar
5 7⁄8 oz pumpkin
1 tsp lemon juice
6 2⁄3 oz flour
½ tsp nutmeg
1 tsp ginger
2 tsp cinnamon
1 tsp baking powder
½ tsp salt
8 ¾ oz powdered sugar
6 oz cream cheese
4 tsp butter or margarine
½ tsp vanilla extract

Procedure On Making The Roll

Step 1: Prepare the Pumpkin Mixture
Whip 3 eggs at high speed for around 5 minutes while slowly adding 1 cup of sugar. Stir in 2/3 cup of pumpkin and 1 tsp. of lemon juice.



Step 2: Add the Dry Ingredients
Mix in by hand all the flour, spices and salt. Combine well.



Step 3: Pour into the mold
Pour the mixture into a greased and floured cake pan mold. Top with chopped walnuts.



Step 4: Bake
Bake the cake at 375 degrees for 15 minutes.



Step 5: After Baking
After baked, sprinkle a towel with powdered sugar. Tip cake out onto the towel. Sprinkle the cake with powdered sugar. Roll up in the towel and let cool.



Step 6: Make the Cream Cheese Topping
Place powdered sugar, cream cheese, butter and vanilla extract in mixing bowl. Beat until smooth.



Step 7: Ice the Cake
Unroll the cake, gently. Spread with cream cheese mixture. Roll up cake again. Chill in fridge until cold.

Just to clarify - "5 7⁄8 oz pumpkin" is pumpkin sauce, right? Like the canned stuff?

Yeah, I imagine it has that sweet spicy taste but the same texture as carrot cake. My girlfriend makes a MEAN pumpkin bread, so she might enjoy this little recipe too.
