    Step One: Find an Image.

Step Two: Paste the Image in to photoshop.

Step Three: Using a selection tool, cut out the piece you would like to be in color.

Step Four: Paste that piece in a new document.

Step Five: Go back to your first document and delete the object that you want it color. Then change the image to black and white by going to Image>Adjustments>Black and White.

Step Six: Go back to your second document with the piece of the colored object, and move it in to your first document over the blank spot where it should go, kind of like putting a puzzle together.

Step Seven: Use your arrow keys to move the piece in to place where it should be.

Or you could use a black+white gradient map and erase what you dont want desaturated? Alot easier.

Ehm no. It doesn't equal out the gradients based on darks and lights, It just makes one side white and one side black.

Hhmmm, theres a much easier way to do this in Gimp 2.6.
Select flower > Invert the selection > desaturate
