Ohh don't worry you won't need to walk at all.

The thing is, when you see an intersection, usually the train will stop for safety regulations, and usually just do there check up there.

This is when you will need to quickly find your edible plants, and make sure that you are on the right track. There are only 2 vital turning points I found on the map, so even if you make a small error you will still end up somewhere near your goal.

You shouldn't have to jump on any moving trains, don't even try that. Lol. If a train you need passes you, you could just use this as a pitstop, and make sure your on the right track and everything. Industrial trains come frequently, so you should be able to get back on in a few hours or so.

I'll get as much information as I can get for you. Although I really want that account, my information will be legit, since I don't want to screw with anyones life here.

This is a big plan, and your a really brave person for doing this . Although it will be a harsh, long journey, you'll benefit greatly in the future from your experience.
