Affectionately referred to as just the "tender," the tender is the tenderloin which runs along the bottom of a chicken's breast meat(s) as a separate piece entirely and is easily removed. It is incredibly tender, hence its own namesake.

Traditional Modern-American fare is almost entirely about bold flavors whereas places like Europe use local ingredients to the best of human ability and Asia prizes ingredients based on texture above all else. We also love salt here in comparison to other countries... I've been doing nothing but baking and eating random meals for the past two months - I ate one of my mom's french fries she got from McDonalds and I could literally FEEL my blood pressure skyrocketing.
