Horse isn't that bad. It reminds me of a differently textured, sweeter beef. The question of it being in foods it shouldn't be in is a separate matter altogether.

If it's not against your beliefs, try to have duck with orange sauce (canard a l'orange). That, as classic as it may be, is the pinnacle of duck cookery. I'm also gonna go full American here - french fries fried in duck fat are pretty much edible deities.
